Skills for Chefs Conference

The 23rd Annual Skills for Chefs Conference took place on 29 & 30 June at The University of Sheffield and Sheffield College.
The conference attracted 180 chefs from across the UK and a great networking and learning programme was delivered.
The opening evening was "An Evening with Paul Ainsworth" who talked passionately about the industry and the challenges we all face across the hospitality industry.
The session was expertly chaired by Martino Mainiero from Delitalia who are supporters of the conference.
During the business day , delegates had culinary presentations in the lecture theatre from Sat Bains and Hrishikesh Desai. Both chefs are Roux Scholars and Hrishikesh also talked about his role as Chair of Judges for Young Craft Guild Chef of the Year.
Sat showcased a Beef dish and Hrishikesh created a Lamb dish , both dishes full of flavour and great technique.
In the Masterclass Kitchens the conference spotlighted the skills of Ross Sneddon , Executive Pastry Chef from Balmoral Hotel in Edinburgh and Jason Howard presented a session entitled “Modern Caribbean Cuisine”.
In addition Martin Eccles , Master Butcher from AHDB worked with Chris Wheeler , Executive Chef from Stoke Park to create Banqueting dishes utilising the best of British Beef.
The conference concluded with a presentation from Pierre Koffmann who also attended the Gala Awards Dinner for UK Young Restaurant Team of the Year , held at The University of Sheffield.
